Wild Berry Pavlova and Coulis

Light, airy, and irresistibly fruity, this Wild Berry Pavlova with Coulis combines a crisp meringue base with luscious cream and vibrant berry flavors – a show-stopping dessert full of color and flavor.

Ingredients:

  • 2tsp vinegar
  • 2tsp vanilla extract
  • 2tsp corn flour
  • 4 large egg whites
  • 2 sachets of your chosen WaterADE flavours
  • 100g light muscovado sugar
  • 100g golden caster sugar
  • 568ml double cream
  • berries to garnish coulis

Method:

  1. Blend the vinegar, vanilla and corn flour to a paste.
  2. Whisk egg whites until stiff, gradually add sugar and WaterADE sachets into egg whites.
  3. Add small amounts of paste until a thin marshmallow meringue is formed.
  4. Pipe into meringue nests and cook for 1 hour at 140 degrees.
  5. Turn oven off and leave nests to cool.
  6. Whip cream and add to top of meringue nests with fresh fruit and coulis.
